MUMS MISHTI DOI- i: মিষ্টি দই or sweet curd

I have several sweet memories of my mum and her mishti doi recipe. She always kept me close by her; you could say my mum was extremely possessive over me during my childhood. What I found to be overwhelming, was actually just her protecting me.

Isn’t it strange how I never wrote any of her recipes down, but simply by closing my eyes and thinking about my childhood kitchen I can remember so much. I can still hear her say “okta deh” pass this here and “aro thura” just a little more… and so on… and basically it’s through those memories I have managed to save her mishti doi recipe and many more.

My mum was very popular with her mishti doi. She would make it at every dinner party and I just remember scraping the sides of the pot once she had finished cooking it. The sides was THE BEST part. Scraps of dried lace like milk which had been sweetened with sugar and yogurt…. Mmm… recreating this memory in my kitchen today has left me feeling both nostalgic and empty…

I miss my mum even more than I did when she was alive.

This is her mishti doi recipe…

Ingredients:
🥛6 pints full fat milk approx 3.5 litres of milk
🥛1 tin evaporated milk
🥛1.5 cup sugar
🥛500g Greek yoghurt

1. Mum would boil the milk until it’s reduced by half. Painstakingly long time 😫
2. Then she would add the evaporated milk and sugar.
3. I don’t remember my mum making caramelised sugar milk which gives that classic mishti doi tinted brown colour. But if u want to u can by simply gently heating sugar in a pan, add a splash of water, keep lid on, allow the steam to melt sugar further until ur left with a beautiful light caramel. Add one cup hot milk and that is your caramelised milk sugar.
4. Mix everything together including the yoghurt.
5. Pour into traditional clay pot. Mum would use the glass Pyrex dish with a lid on and leave it in a low oven overnight.
6. In the morning she would chill the mishti doi ready for her lunch parties.

This opened today in my mums home town. She would have been so busy. I remember my entire childhood at Woolworths, then Kwik Save, A Peacocks and now May 2022 a LIDLS!

My mum was a massive Tesco shopper but this would have helped her pick out her favourite bargains. I appreciate today every penny my mum saved unlike me, so greedy for food opting for pricier brands.

Lidl couldn’t have arrived at a better time for one of the countries not so wealthy boroughs that is Newham. I’m just so happy for everyone.

I really enjoyed my morning, so good see Shelves neatly laid out. This store is going to do fantastically well in the area. I just hope that they maintain the tidiness because for me I need to shop in a tidy and full store.

STRAWBERRY CUPCAKES - HEY EVERYBODY PART 2😍

I have fond memories of baking with my boys and today they are very good at it.

Little madam is also learning. You all enjoyed her banana bread recipe video three months ago so today was one of our favourites; the strawberry cupcake.

Can I just say this recipe is DELICIOUS!

Has proper picnic vibes to it and using high quality ingredients means it’s really tasty. Baking with children shouldn’t mean you skip out the quality part.

This recipe made 20 cupcakes and I use my usual “same weight as eggs” method.

🍓222g cracked eggs, no shell
🍓222g sugar
🍓222g anchor butter
🍓222g self raising flour
🍓1tbsp milk
🍓2 vanilla pods

For the cream, I did make one mistake which was I puréed the strawberries when I should have used A fork.

🍓1 tub double cream
🍓3 strawberries mashed
🍓1/3 cup icing sugar

Bake Time 180°c 20mins

Just a perfect summer bake 😍

Filled with deep intense emotions,
As my little madam turns four…
Contemplating on what could have been,
As my mother is no more…

I dreamt of life so differently,
I dreamt we would be free.
I dreamt that she would teach us that,
Love was with everyone and me…

To live life without her presence,
Was something that I was used to,
To live without her existence,
Is something that I won’t get used to.

When I turned four, and six and ten
She would get a chocolate gateaux cake.
For all our birthdays she did the same
Treated US ALL the same for goodness sake!

There are things I miss I shouldn’t,
And things I don’t that I should.
Sometimes we want what we couldn’t,
Sometimes we love who we could.

This weekend my little madam turned four,
I thought I would have their Nanny here.
She would try and blow her candles out
And mum would laugh, sing and cheer!

I think about my mum always,
I talk about her still.
She will never be forgotten,
And I know I never will.

My children will grow without her,
They already grew without her here.
Unseen, unheard and unmet
But still loved, still missed and very dear.

To my estranged dearest mother…
Why could we not piecemeal our past?
We are given one shot at this thing called life,
But now this life just did not last.

I’m trying to raise five children
But your silence has left me hurting…
Scarring me, destroying me, pleading me.
Screaming me and anger turned to crying.

Your only daughters daughter turned four yesterday and I just want u to say,
“Happy birthday to you my jaan,
Have an awesome day.”

Estranged from you
What wealth have I gained?
Distant memories
And a heart full of pain…

Each night I sleep
In my bed of sorrow…
There was no yesterday
There is no tomorrow…

Filled with deep intense emotions,
As my little madam turned four…

Losing a parent is hard for everyone,
But losing a parent whilst being estranged is a pain i’m struggling to fathom.
Every part of me that aches I relate it back to my mother. Stress and trauma, anxiety and emotions can all affect our bodies, resulting in pain and illnesses… 😔
