3 INGREDIENT SOI FITTA

Im very pleased with myself, today I made 25 of these rice dumplings (you can count, a few were eaten by little madam ☺️). It’s actually very easy to make if you know how that is.

I concluded that the secret is you need a mans hands to do all that hard work, all the kneading, it simply cuts the time by half 😉

There are 7 steps to making the perfect soi fita. My fond memories are having these with my Late mother in law’s chicken boiler curry (May Allah Be Pleased With Her). I love the combination and so do the kids 👍🏻

1️⃣ Using a really good non stick pan, roast 3 cups of ground rice, continuously for 10 mins.

2️⃣In 3 cups of kettle boiled water add 1tsp salt. Dissolve.

3️⃣In a large bowl, add roasted ground rice and water and combine.

4️⃣Place foil or a lid for 10 mins, cover. Once a little cool to touch, thoroughly knead for 10 mins. I get Hungry Husband Cooks to do this and he enjoys it very much.

5️⃣ Roll the entire mix into a log, and cut into balls. I got 25. You can make cube shaped dumplings, or rhombus shaped dumplings or even coke shaped dumplings. I like to use oiled hands when shaping my dumplings.

6️⃣Place in a steamer, steam for 20 mins, lid on.

7️⃣Lay them flat , sprinkle cold water and rub each dumpling to avoid them sticking together.

❤️Your SOI FITTAS are ready to enjoy.
❤️Roast them in ghee, or onions and ghee if you like.
❤️Some people slice them and fry with ghee and onions.
❤️You can serve with chicken or meat curry too. It’s an Eid delicacy.

Last Friday on stories I shared this delicious bake. I forgot to give you guys feedback. The kids loved it! They asked for me to make it again. Let me remind you about the layers:

❇️the first layer lamb mince cooked with onions garlic, black pepper, salt and hungry spice mix with Italian herbs. I also added hidden veg in the lamb (mushrooms, tomatoes, courgette and carrot).

❇️the second layer was some spaghetti cooked al dente. I chopped the spaghetti into four.

❇️on top was a jar of creamy tomato sauce. I used @tescofood mascarpone and cream tomato sauce. You can also use @homepridebaking and also clear the jar with water and add.

❇️the next layer was a neat row of alternating potato and courgette slices. With salt, pepper and herbs.

❇️top with cheese and breadcrumbs

Enjoy. Il be making this again midweek.

Off on another food adventure today, @hungryhusbandcooks took us to Tottenham Court Road, @sevendialsmkt

Can I just say I loved the market.
I loved the concept.
I loved the interiors and
I loved ordering from the comfort of my table. I also loved the fact that it’s only a few mins walk from the station.

I’m coming back again!

A little pricey (this is not sponsored) but I really loved the hot doughnut which was pistachio and white chocolate flavoured. I didn’t see the point in the cold doughnuts, waste of money. The passion fruit iced tea was also very good, although I do prefer the one in @theurbanchocolatier

I was really disappointed with the food at @smokeandbonesuk - the buns were cold, the nihari was cold and flavourless. Some ginger, lemon and chillis could have helped. I would highly recommend replacing the buns with naan with a little ghee/ butter served hot. The brisket bun was cold, flavourless and bland. I would have preferred it hot and the extra salad... Iv had nicer ones for free at a Turkish kebab place 😵

I’m hoping their ribs will be better. Il be back to try them.

MASALA FRIES ALLDAY EVERYDAY

I always keep you guys in mind so you can use my recipe after school or middle of the night too and satisfy those much needed cravings 😍

⭕️ fries from any supermarket
⭕️3tbsp oil
⭕️1 onion sliced
⭕️1 bulb garlic minced
⭕️1”ginger minced
⭕️1tsp salt
⭕️splash water
⭕️1tsp black pepper
⭕️2tsp red chilli flakes
⭕️1tsp cumin powder
⭕️2tsp Kashmiri chilli powder
⭕️1/3 cup soy sauce
⭕️1/3 cup sticky bbq sauce or sweet chilli sauce
⭕️1/3 cup ketchup
⭕️1/4 cup soft brown sugar
⭕️spring onions
⭕️1tsp white pepper

Make the sauce using the above ingredients adding it in order.

Enjoy and eat your heart out 😍

🧷230+ pal*estinians reported dead vs 12 in is/rael
🧷68% content on Instagram “deleted”
🧷91% content suspended
🧷hundreds of Pal*estines children are confirmed dead
🧷Israe*li aircraft spraying herbicide beside the buffer zone along the Gaza strip is directly affecting the livelihoods of Palestinians in violation of international standards as the spray is reaching more than 300 metres (980ft) into Gaza, killing agricultural crops and causing “unpredictable and uncontrollable damage”
🧷severe water supply, no water supply, poisonous water supply
🧷only power plant has been bombed, enduring power cuts United Kingdom to 20 hours a day
🧷tank shells pounding housing leaving thousands more homeless and displaced as well as orphans

The world has grown used to the idea that severe hunger manifests itself only in the hollow cheeks and distended stomachs of an African famine. But today in the Gaza Strip and the West Bank an insidious hunger has the Palestinian people in its grip. Hidden in the anaemic blood of children or lost in the statistics of stunted growth, a dreadful, silent malnutrition is stalking the Palestinians.

5 ingredient KHEER HEERA BASMATI @heera_foods

Growing up besides Green Street, meant I had access to all the top south Asian food brands and that includes @heera_foods and I was chuffed to bits when they recently got in touch.

It’s no secret, that the Punjab’s are known to make delicious kheer so I made some too using their finest basmati rice. This is my easy and classic recipe, using the finest of ingredients, which includes syrup 😍 you can change it up if you wish.

For my recipe you will need:

🍚1 litre full fat milk
🍚1/2 cup @heera_foods basmati rice
🍚3/4 cup sugar
🍚1/2 cup cardamom syrup
🍚 pistachio nuts to garnish

Wash and rinse rice and soak for 30 mins. Break up the rice with your hands and discard the water. Cook in boiled milk and stir for an hour. Add sugar, syrup, top with nuts and chill. Enjoy 😍

It’s that time of the year again, we are cooking and eating lots of food throughout the day with perhaps for some of us guests popping in and out throughout the half term.

I always believe that some kind of pulao or biryani always says “welcome” and @zulekha.foods frozen charcoal kebabs is always a good option when adding that extra special item on the table, especially as it only takes two minutes!

This is what gooey fudgey brownie should look like 👀

1. 400g (brown and white combined) sugar
2. 100g melted orange chocolate
3. 200g plain flour (or almond flour)
4. 225g melted butter
5. 2tsp orange flavourings extract
6. 4 eggs
7. 10g cocoa
8. 20g chocolate orange chunks
9. 3/4tsp baking powder
10. Pinch salt
- combine everything wet first then dry.
- 25mins 190degrees
- Dust icing sugar
- Cut into 20
