This firecracker of a wedge is absolutely delicious; it has your tastebuds craving another hot, spicy bite!

 2 Red Rooster Potatoes
 1 tbsp Chilli Oil
 0.50 tsp Himalayan Pink Salt
 2 tbsp Sirircha Sauce
 5 tbsp Grated Parmesan Cheese
 2 Green chillis
 3 tbsp Fresh Coriander

Pre heat your oven to gas 8- 350degrees.

Wash and dry your potatoes.

Cut your potatoes longways, creating a classic wedge shape. You should achieve 4-6 wedges per potato.

Drizzle chilli oil and add salt. Line the wedges in an oven tray.

Roast the wedges in a hot oven for 25mins or until fully cooked.

Once cooked, drizzle sirircha sauce. Then sprinkle on the cheese.

Put it back into the oven for 3-5 mins, until cheese has melted.

Garnish with finely chopped coriander and green chillis and serve immediately. Enjoy.
