These superb spicy hot wedges are loaded with triple chillis. Whoever thought that potatoes could be so spicy and so dam good as a wedge!

I must confess I'm not a huge lover of sriracha sauce but at the same time i religiously go by the "do not waste" lifestyle, where i do not like to dispose anything quite frankly edible! So yes that effectively makes me a massive hoarder in life, something we will probably not discuss and leave for another day! 🙂

So as the bottle of sriracha sits in my pantry, i was wondering and thinking of a way to use it up. Whilst marinating my spicy hot roast chicken, the idea came to me. Why not combine roast potatoes with sriracha sauce? Genius! so the recipe developed, one cold and hungry February 1st morning where i was actually going through my weekly "lets clean out the fridge" routine. I threw in what i had in the fridge (cheese and coriander) and decided to create an impact with more chillis for the wedges.

If you are unable to access parmesan cheese, you can quite honestly add any cheese you like. Mature cheddar, emmantal and mozzarella are all great alternatives.

And if you don't have access to sriracha sauce, by all means use your favourite chilli sauce. Even sweet chilli sauce would be a great option for the little ones.

Any potatoe will work also, and last but not least if you cannot handle the heat of small birds eye chillis why not go for a classic spicy option' the jalapeño ? Red onions would also give this wedge a nice kick too.

For a healthier alternative, try this same recipe with sweet potatoes. I have done so many times and the sweetness balanced with the chillis is really delightful to the tastebuds>

Hope you all enjoy the recipe below and if you give it a go, sure leave a comment below 🙂
