Happiness comes in rice form; a bowl of rice or rice roti

 1 cup Water
 1 tsp Salt
 1 cup Rice Flour
 3 tsp Flour For Rolling

In a non-stick pot, bring to the boil water and salt.

Add flour and rapidly stir for 2 minutes.

Put the lid on, turn the flame on low and allow the dough to cook for 5 minutes.

Turn the flame off and allow the dough to rest for another 5 minutes.

Oil your hands and kneed th dough for a further 5 minutes until smooth and soft.

For the perfect rice roti, roll out six or 8 round thin rotis, With a rolling pin on a floured surface

Heat a tawa to medium hot, and cook on one side until it puffs up and is speckled brown on the underside. Turn it over and fry on the other side for a few minutes, until it too is puffed and speckled brown. Remove from the pan, allowing the roti to cool for a few seconds, and fold into half and wrap in a clean tea towel placed in a colander until ready to eat.

For extra soft rotis steam before serving best served with meat/beef curry.
