SUPER FLUFFY BUTTERMILK PANCAKES

Melt in your mouth buttermilk pancakes. It is said that a man who does not like pancakes doesnt love life...

 2 Plain Flour
 2 tsp Baking Powder
 1 tsp Fine Sea Salt
 1 tsp Bicarbonate Of Soda
 2 tbsp Caster Sugar
 2 Free Ranged Eggs
 23 tbsp Melted Butter
 2 Buttermilk

Whisk the eggs milk and butter together.

In another bowl combine the flour, sugar, salt, baking powder and bicarbonate of soda together .

Make a well in the middle of the dry ingredients. Pour in the wet ingredients gently and stir until almost completely combined. Please note, the more you stir the batter the more flat and tough they will be because the air will have deflated so please mix until a few streaks of flour are remaining.

Preheat a griddle pan and brush a little butter in a pan.

Pour some batter into the pan and leave for 1 minute. I pout half a cups worth.

Flip when bubbles begin to form above the pancake and serve once golden brown.

Plate it up and add any toppings of your choice. I love to add creme fraiche, maple syrup and berries to mine.

Did i tell you Hungry Husband loves Pancakes? He absolutely adores oancakes! We literally have one kind of pancake a week. I like to change up the different styles of pancakes we have or else i would honestly tire of it and i will never let a man do that to me! I have discovered over a period of time the most fluffiest buttermilk pancake recipe ever!

It is not only super light weight because of the addition of buttermilk but it is so intensely good in flavour! The rise on these are amazing and the recipe is full proof! You can do it and so can the children.

Buttermilk itself is a delicious dairy product made from a by-product of butter-making – the liquid that is left over after butter is churned from cream. It is now made commercially by adding a bacterial culture to skimmed milk. It has a slightly sour, acidic taste and is used for making scones and soda breads AND MY PANCAKES. It can also be used to replace milk for a healthier milkshake.All you need to know is that it is so so delicious!

Good for drinking on its own or for use in baking, buttermilk has a tart flavor and comes packed with essential nutrients. Did you know buttermilk is high in calcium and riboflavin? If you are unable to source buttermilk (which by the way is found in the shelf besides double cream and fraiche creme) then fear not! You can make your own buttermilk with just one cup of milk and one tablespoon of lemon (or vinegar)!. You just need something acidic to react with milk. The mixture won't get as thick and creamy as buttermilk, but it will perform its role in the batter just as well. Incidentally, yogurt or sour cream thinned with milk (or plain water, in a pinch) also work well as buttermilk substitutes.
