This is my showstopper dessert, the perfect way to begin the last 10 days of Ramadan.

I was desperately craving something sweet and this had to be it as I have a lot of gifted chocolate boxes to go through.

just one bite of this Ferrero Rocher Nutella Cheesecake will send you straight to seventh heaven?? Inshallah 😭

INGREDIENTS:

For the base
🍫200 g Digestives
🍫100 g Butter Melted @anchor_dairy
🍫50g hazelnuts
🍫1tbsp nutella

For the cheesecake mixture
🍫500 ml Double cream At room temperature
🍫500 g Cream cheese Full fat and at room temperature
🍫100g Icing Sugar
🍫 half jar @nutellauk
🍫15 Ferrero Rocher

For decoration
🍫8 Ferrero Rocher
🍫 1tbsp Nutella melted with 2tbsp double cream and 1tsp butter
🍫2tbsp chopped hazelnuts

Dear Amma,

I am in my kitchen today, and this is in honour of the memories I shared with you. For all the hardship and struggles you went through for us, for raising us the right way in light of all the difficulties that we faced. I remember all the times the sacrifice you made just for us, so that we could have a better life. Your perseverance and patience throughout my early years will forever remain with me. And I know from straight from my heart you would always be there for me showing me the ropes.

All Your hard work and endeavours will never go unnoticed. I remember spending time together watching you in our 2x3 small family kitchen, you would make this mouthwatering Butter Paneer Masala every Thursday. You always used to cook amazing dishes, even the stage when you took your pan out the cupboard, whilst I tried to steal a paneer piece, and dig my little fingers in butter under the table, my mouth would salivate whilst you would tell me “this is the step where you add butter and coconut to make it extra creamy.

I used to cut all the onions, but You were so fast as well, in a very small amount of time, you would make the most amazing dishes that you brought over to London from Nanis Bangladeshi kitchen, just so that you could go back to work on your sewing machine, so you could earn some money to provide for us. Thank you all the hardship that you went through and all the fond memories I have of you.

The boys are very good at maths and they love exploring all things maths and one of them particularly is rather obsessed with money. He wants to be rich he says, and doesnt everyone! He asked me the other day how the £1 currency exchanges in Bangladesh Taka and what he could buy for £1. He was absolutely gobsmacked when he realised he could buy quite a lot of chocolate’s and sweets. Safe to say, thank Goodness we arent in Bangladesh with a £1 coin right now!

It made him realise how strong the pound was and the things he could buy in Bangladesh for a whole entire village, whom let’s face it, are severely underprivileged and box of chocolates in London for £5 could be a whole loada boxes of chocolate for a village in Bangladesh.

My father-in-law often used to travel to Bangladesh and whilst we may have requested for certain gifts back, we also liked to send money to feed the poor as we couldn’t travel ourselves. But as he is unable to travel now , we seek through alternative means of money transfer safely.

APPLE PIE SAMOSAS

Classic apple pie filling inside a samosa pastry.

My boys loved them 😍

Took me 10/15 mins to make and I was pleasantly surprised too. Who needs Macdonalds ey? 😋

For the filling:
🍏1 apple grated
🍏2tbsp sugar
🍏pinch of cinnamon

For the pastry:
🍏1 cup plain flour
🍏3-5tbsp oil
🍏1/2tsp salt
🍏1/4tsp baking powder
🍏1/2tsp sugar
🍏warm water to bind

Toppings:
🍏Hungry Honey drizzle
🍏pistachio
🍏flaked almonds
🍏desiccated coconut sprinkle

Serve with @lidlgb coconut yoghurt with some honey and cinnamon on top

A top samosa dessert guys 😇

CHILLI CHEESE ARANCINI BALLS

#AD RAMADAN WITH Hellmann’s Original Squeezy Mayo

I think it’s pretty amazing that western brands such as Hellmann’s is sponsoring the @OpenIftar UKs largest virtual community event, for the third year in a row, to support millions of people across the UK fasting for #Ramdan2021 . Hellmann’s wants to inspire those breaking fast to create a delicious Iftar meal with the help of its iconic mayonnaise.

The great thing about @hellmannsuk is it’s sustainably sourced, it’s vegetarian and halal.

With Ramadan festivities in full swing there’s no better way to break your fast than with Hellmann’s Real Squeezy Mayo and skip spooning 😍

Hellmann’s Real Squeezy Mayonnaise is available from all major retailers.
RRP: 250ml - £1.00
430ml - £1.50, and
750ml - £2.50

Ingredients List:

✅1kg red potatoes- mash
✅1tsp onion salt
✅1cup mozzarella cheese
✅3 green fiery chillis chopped
✅2tbsp Hellmanns Real Squeezy Mayo
✅1egg cracked in a bowl
✅1cup breadcrumbs in a bowl
✅ Vegetable Pil for deep frying

1. Peel, wash and rinse potatoes.
2. Boil potatoes, mash and set aside till completely cool.
3. Once cool, add onion salt to the mash and combine well.
4. In a bowl, combine mozzarella cheese, chillis and Hellmann’s Real Squeezy Mayo together.
5. Using an ice cream scooper, scoop some mash into your hand.
6. Make an indent using your finger. Add 1 tsp of the cheesy mixture and cover with more mash.
7. Roll the mash into a ball, using your hands ensuring no cheese leaks out.
8. When they are all ready, put the egg and breadcrumbs into two separate shallow bowls. Dip each prepared ball into the egg followed by the breadcrumbs. Transfer to a tray and set aside.
9. Half-fill a large, heavy-based saucepan with vegetable oil and heat over medium-low until it reads 170°C on a cooking thermometer or until a piece of bread turns golden brown in the oil within 45 seconds. Lower the risotto balls into the oil in batches and cook for 2-5 mins, or until golden brown and melted in the centre. Set aside on a tray lined with a clean kitchen towel.
10. Serve with chilli Mayo.

This Ramadan, Tesco are helping us get the most out of our food we have leftover and don’t we know it! We always have leftovers because whilst fasting, we tend to eat with our eyes and end up having so many extra ingredients spare.

For me, croissants and bakery items are just a couple of them. We hardly touch bread but always buy bread out of habit and today I have lots of extra croissants. I’m also making another with filo pastry.

The Tesco recipe Website has thousands of recipes for inspiration including a number of Ramadan Recipes. I inputted croissants and raspberries and it suggested “Om Ali” a traditional Egyptian dessert What a great recipe for iftar, because after all we love having a small bite of sweetness.

The Tesco tool is great for using up leftover ingredients, meal planning and saving food waste.

So Hungries, try and use the Tesco Recipe Website to find helpful recipes this Ramadan to use up any leftovers or ingredients you have in the kitchen after iftar! The Tesco Recipe Website also has a ‘What Can I Make With’ Tool to input any ingredients you want to use up, and it generates a recipe for you!

🔴2tbsp Vegetable Oil

TANDOORI CHICKEN & SPICY RICE

Today’s recipe focuses on the rice. We are all familiar with spicy rice i have shared previously. But today’s one is a little different.

It’s my chilli and lemon rice inspired by my favourite crisps you all know I LOVE to eat those from those Asian grocery shops 😍

It goes so well with my tandoori chicken and I thought you may fancy it for iftar today. Basmati or easy cook rice can be used:

1️⃣ Wash, rinse, soak 3 cups of rice, set aside, 30 mins with 1.5tsp salt.

2️⃣Cook the rice, cool and set aside.

3️⃣In a pan, heat 3tbsp olive oil and cook 2 onions until completely soft. Add 2tbsp garlic and cook for five mins.

4️⃣Add 1tsp turmeric, 1/2tsp cumin powder, 1.5tsp chilli powder, 5 green chillis chopped and 1/2cup chilli sauce of your choice. Hot headed Naga sauce is the one 😇

5️⃣Add 1chicken stock cube and 1tsp salt for seasoning.

6️⃣Add the rice and stir. If you need water add a little.

7️⃣To finish, add 2 lemons juice you can use lime if lime is your thing.

8️⃣Garnish with fresh coriander or 2tsp @colmansuk mint sauce

TA DA easy chilli and lemon rice. This pairs so well with any kind of chicken. I love tandoori chicken very much.

I believe this recipe to be relatively healthy and I served it with some steamed broccoli because the kids love broccoli.
