CRISPY FRIED NOODLES

Forget the diet, its all about the love affair between eggs and fried noodles.

I thought this was just standard.
You know like a 10 minute brunch whip up.
Alas! How wrong was I!
I never knew a noodle dish could be so popular let alone requested so many times ?

So here it is. I like to use @theofficialkoka
But indomie is also really nice, thinner noodle.
Off course you can go with the classic Maggie noodle too.
@waitrose egg noodles work really nicely, you can see that one from my Cornish travels.
I like chicken or prawn flavoured.
Chicken stock is also the same thing.
Don't need salt.
So here goes :

Ingredients

2 Kota Noodles Pakets Chicken Flavour

1 Sliced Onion

2 Garlic Cloves Thinly Sliced (OPTIONAL)

1/2 tsp Turmeric Powder

1/3 cup Oil

3 Eggs

1 tbsp Butter

1/4 cup Coriander

3-5 Green Chilles Chopped

Directions

1Boil noodles and keep aside. Don't make them soggy! Same with pasta works.

2In a pan fry 1 thinly sliced onion with 1 julienned Potatoe 5/8 mins (make sure they are cooked, no raw business) with 1/2tsp turmeric - optional- in 1/3 cup oil. Garlic too if u love it like me.

3Push to the side and scramble 1 or 2 eggs in the residue oil.

4Add the 1 pack noodles or 250g cooked pasta.

5Let it slightly char. The crispy bits are the best bits.

6Garnish with coriander and green chillis. I love love love noodles/ pasta this way and this way only. I love to throw prawns and mushrooms sometimes too. Chicken works but I don't like it.
